Rainbow Cupcakes

This weekend has been a busy one! I had three birthday parties to attend on Saturday, but unfortunately only made it to two. One was all the way in Los Angeles so that didn’t help for timing. In any case, on Friday I helped my friend Breanna bake and decorate cupcakes and a cake for the first party (an old coworkers’ daughter turned 3). Nothing fancy for the cake part (just box mixes), but we did use a Martha Stewart recipe for the butter cream icing. We also used a number of tips to decorate the cupcakes. We used the following recipe to make the icing:

Butter Cream Frosting:
Modified from the Martha Stewart Recipe
1 pound butter (4 sticks) at room temperature
5 3/4 c sifted confectioner’s sugar
1/2 tsp vanilla extract

Beat the 4 sticks of butter on medium high speed with 1 and 1/2 cups of sugar. Once smooth and creamy (about 2 minutes), reduce the speed to medium and mix in the rest of the sugar either a 1/2 cup at a time or a cup at a time (about 5 minutes total). Last, add in the vanilla and beat it all on medium high speed for about another minute.

20140124_192644 (1) We thought rainbow cupcakes would appeal to the kids at the party. I guess it worked since they were literally licking the frosting off of their fingers they liked it so much!

We also created a Minecraft cake for another boy at the party (it was a joint birthday party). We used a star tip to create a more blockish look.
