This Saturday I had the opportunity to bake with my grandma. In my family, she is known for making THE BEST sticky buns EVER! On holidays my relatives and I stuff our faces until we feel sick from those delicious gems. While this is not about those sticky buns, this recipe is good in and of itself (if you like peanuts and coconut, which I clearly do). There are tons and tons and TONS of cookie bar recipes out there and I have tried zero of them! I know, I’ve got some catching up to do! This recipe is from a catalog published about 40 or more years ago.
To begin, preheat the oven to 350 degrees and grease an 8×8 baking pan.
The bottom layer includes:
1/2 c butter/crisco/spry (you choose)
1/2 tsp salt
1/2 c brown sugar
1 c flour
Add all of the bottom layer ingredients together and bake them for 10 minutes at 350 degrees.
While the bottom layer is baking, combine:
2 eggs beaten
1 c brown sugar
1 tsp vanilla
Then add the following to the eggs and sugar mixture above:
2 tbsp flour
1/4 tsp salt
1/2 tsp baking powder
1 c Spanish peanuts
1.5 c coconut
Mix the ingredients and pour them over the bottom layer when it comes out of the oven
Now put it in the oven at 325 degrees for about 25 to 30 minutes….. and in 5…4…3…2…1…ta da!!!
Your Finished Product
I wanted to eat one immediately, but my grandma insisted that we wait until they cool. I’m clearly a rule bender
Please note that I used butter although the recipe called for spry (kind of like crisco). The butter changed the flavor, and thus, my cookie bars, although moist, had a hint of peanut brittle flavor (this is also due to the fact that I used unsalted peanuts instead of Spanish peanuts…oops). That being said, I ate about 3 of these bars and thought they tasted delicious!
I deem these bars….. STUFFED approved!
