I have been wanting a home cooked meal for the longest time so I finally caved and looked up recipes on one of my favorite food blogs until I found this!
The buffalo chicken quesadilla was delicious! So was the guacamole, but we’ll get to that in a bit! I know you may be thinking, mango guacamole does NOT go with buffalo chicken, but give it a chance! You may find a new flavor combo you like, and if not you can always use the guacamole to go with chips, pita bread, or veggies! For the quesadilla, you will need the following ingredients:

(adapted as follows)
2 cups cooked chicken, shredded
1/2 cup buffalo sauce
2 cups shredded cheese (I used cheddar)
4 burrito tortillas
Combine the chicken and buffalo sauce in a bowl until the chicken is fully coated. Put a tortilla on a pan, spread the 1/2 cup of cheese to fully cover the entire tortilla and then put a 1/2 cup of buffalo chicken on half of the tortilla and fold over the other half. Cook the tortilla for a few minutes, or until the tortilla is golden brown, and then turn it over. Do these steps for three more quesadillas.
Now for the quacamole! The mango guacamole came out of a magazine and was to die for! Prepping the mango frustrated me to no end but was totally worth it in the end.
3 ripe avocados
the juice of 2 limes
1/2 bunch of cilantro roughly chopped
1 cup chopped mango
1/2 tsp salt
1 – 2 tablespoons jalapeno pepper, finely chopped
2 garlic cloves, finely chopped
Dash of cayenne pepper
Mash the avocados with a fork then add in the other ingredients. Voila!
