I jumped on the healthy band wagon and decided to make some healthy cookies. I’ve been CRAVING oatmeal cookies so I decided to use oats in this cookie recipe. Some days I really believe that desserts are meant to be fattening and sweet, while other days I want to have my cake and eat it too. I guess today I was feeling the latter. First things first, preheat the oven to 375 degrees.
Healthy Oatmeal Chocolate Chip Cookies:
1/2 c coconut oil
1/2 c butter (1 stick)
1 c brown sugar
1 c flour
1/2 c whole wheat pastry flour
1 c oatmeal
1 tsp vanilla
1 tbsp cinnamon
1 tsp baking soda
1 tsp nutmeg
1 cup chocolate chips (optional)
Combine the coconut oil, butter, egg, and brown sugar until combined. Second, add in the vanilla and mix well. Next, mix in the two flours and mix until fully combined. After that, add in the baking soda, cinnamon, and nutmeg. Lastly, mix in the oatmeal and then fold in the chocolate chips (optional). Place the cookies on a baking sheet and bake for about 8 to 10 minutes or until done.
*** Whole wheat pastry flour is a lighter type of baking flour alternative to the whole wheat flour available at most grocery stores. Whole wheat flour can be very heavy in recipes and makes them more dense than most of us would like.
