I’m pretty lazy when it comes to cooking. On weekend mornings I usually try to eat eggs, and eating eggs usually turns into making breakfast sandwiches. They’re just so tasty and easy to make! Oh, and my boyfriend will even help make these.
I’m telling you, it’s all about the cheese! I have made these so so so many times, but they just don’t taste the same without cheese.
1-2 eggs (per sandwich)
salt, pepper, garlic salt, cayenne pepper to taste
1 whole wheat english muffin (per sandwich)
1 slice of cheese (american or cheddar or gouda or whatever the heck cheese floats your boat)
2-3 pieces of turkey bacon
1/4 to 1/2 avocado (optional)
1. Cook the turkey bacon in a frying pan on the stove, flipping every 2 to 3 minutes or until fully cooked (I like mine crispy!).
2. Split the English muffin in half and toast both pieces in the toaster.
3. You can use the bacon grease to now cook the eggs. Use the stove top to cook the eggs like an omelette, trying to keep it fairly compact so it will fit inside a sandwich. Add the salt, garlic salt, pepper, and/or cayenne pepper to the eggs right after breaking them into the frying pan. I allow the eggs to cook a while on one side and then flip them over and compact them. Allow them to cook until they’re not runny.
4. Place a piece of cheese on top of the eggs and put it on one half of the English muffin. Then place the turkey bacon on top of the entire sandwich and enclose it with the other half of the English muffin. You can also add avocado on top of the cheese as well!
5. It’s as simple as that!
